  • 1 cup long-grain wild rice (uncooked)
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 6 cups low-sodium chicken broth
  • 1 1/2 cups heavy cream or half-and-half
  • 1 small onion, finely chopped
  • 2 stalks celery, diced
  • 2 medium carrots, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped, for garnish

  • Instructions

    1. Rinse wild rice under cold water, then combine with 3 cups water or broth in a saucepan. Bring to a boil, reduce heat, cover, and simmer for 40–45 minutes until tender. Drain and set aside.

    2. In a heavy-bottomed pot, melt butter over medium heat. Add onion, celery, and carrots. Sauté for 5 minutes until vegetables soften.

    3. Stir in garlic and cook for 30 seconds. Sprinkle flour over vegetables and stir constantly for 1–2 minutes to form a roux.

    4. Slowly whisk in chicken broth to avoid lumps. Bring to a gentle simmer, stirring until the base thickens.

    5. Add shredded chicken and cooked wild rice. Simmer on low for 10–15 minutes to meld flavors.

    6. Stir in heavy cream and heat for 5 minutes without boiling. Season with salt, pepper, thyme, and bay leaf.

    7. Remove bay leaf. Garnish with chopped parsley and serve hot with crusty bread or in bread bowls.
