1. Preheat oven to 375°F (190°C) and grease an oven safe skillet or baking dish
2. Heat oil or butter in skillet over medium heat
3. Add onion and garlic and cook until fragrant
4. Stir in corn and zucchini and cook until just tender
5. Sprinkle flour over vegetables and stir for one minute
6. Slowly add milk or cream and stir until sauce thickens
7. Remove from heat and season with salt pepper and herbs
8. Whisk eggs in a bowl and temper with a spoonful of hot sauce then stir into the vegetable mixture
9. Fold in most of the cheese reserving some for the topping
10. Transfer to baking dish if needed and sprinkle with remaining cheese or crumbs
11. Bake uncovered for 20 to 25 minutes until golden and bubbly
12. Let rest five minutes before serving
