1. Wash and hull the strawberries, then chop larger berries into pieces.
2. Combine strawberries, cottage cheese, honey or maple syrup, vanilla extract, milk or cream, lemon juice, and salt in a blender.
3. Blend on high until the mixture is completely smooth and pale pink.
4. Optional: chill the blended mixture in the refrigerator for 30 minutes to enhance flavor and reduce ice crystals.
5. If using an ice cream maker, churn the mixture for 15–20 minutes, then transfer to a freezer-safe container and freeze for at least 2 hours.
6. If not using an ice cream maker, pour the mixture into a freezer-safe dish, freeze for 1 hour, then stir vigorously every 30 minutes for 2–3 hours until creamy.
7. Let the ice cream sit at room temperature for 5 minutes before scooping and serving.
