    2. While the garlic roasts, peel and quarter the russet potatoes. Place them in a large pot and cover with cold water by about an inch. Add a generous pinch of salt to the water. Bring to a boil over high heat, then reduce heat to medium and simmer for 15-20 minutes, or until the potatoes are fork-tender and easily pierced.
