2. Add sliced kielbasa and sauté for 4–5 minutes until golden and crisped.
3. Stir in onion and garlic and cook 2 minutes until fragrant.
4. Pour in chicken broth and scrape up any browned bits.
5. Add uncooked pasta, partially cover, and simmer 10–12 minutes, stirring occasionally.
6. Reduce heat to medium-low and stir in heavy cream, salt, pepper, and smoked paprika; cook 2–3 minutes until sauce thickens.
7. Mix in shredded cheese until melted and smooth.
8. Fold in spinach or peas if using, until wilted and heated through.
9. Remove from heat, garnish with parsley, and serve immediately.
