1. Rinse rice under cold water until water runs clear.
2. In a saucepan bring 2 cups of water to a boil.
3. Add rice, reduce heat to low, cover, and simmer for 15–18 minutes until tender.
4. Whisk pumpkin puree and coconut milk in a bowl until smooth.
5. Pour pumpkin mixture into cooked rice, add sugar, cinnamon, nutmeg, vanilla, and salt.
6. Stir to combine and bring to a gentle simmer over medium-low heat.
7. Cook uncovered for 15–20 minutes, stirring frequently, until pudding thickens.
8. Adjust sweetness or consistency by adding sugar or extra coconut milk if needed.
9. Remove from heat; pudding will thicken as it cools.
