  • 2 cans (14.5 oz each) diced tomatoes
  • 1 tablespoon tomato paste
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 910 oz package cheese tortellini (fresh or frozen)
  • 1/4 cup fresh basil leaves, chopped, plus more for garnish
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1/4 cup grated Parmesan cheese, for topping

  • Instructions

    1. Heat olive oil or butter in a large pot over medium heat and sauté chopped onion until translucent, about 4 to 5 minutes.

    2. Stir in minced garlic and cook for 30 seconds until fragrant.

    3. Add diced tomatoes, tomato paste, broth, Italian seasoning, red pepper flakes, salt, and pepper. Bring to a boil, then reduce to a simmer and cook uncovered for 10 to 15 minutes.
