1. Heat 1 tablespoon of butter or oil in a skillet over medium-high heat and brown the ground turkey for 5-7 minutes
2. Transfer browned turkey to a bowl and set aside
3. Add remaining butter to the skillet and sauté the onion for 3-4 minutes until translucent
4. Stir in garlic and mushrooms and cook for 6-8 minutes until mushrooms release their moisture
5. Sprinkle flour over the vegetables and stir for 1 minute
6. Slowly pour in chicken broth while stirring and scraping up brown bits
7. Add Dijon mustard, Worcestershire sauce, paprika, salt, and pepper and simmer for 2-3 minutes
8. Return cooked turkey to the skillet and simmer for 3-5 minutes
9. Reduce heat to low and stir in sour cream until the sauce is silky
10. Serve over egg noodles or your choice of rice, zucchini noodles, or mashed potatoes
