1. Heat olive oil in a large skillet over medium heat.
2. Season chicken with salt, pepper, and half the Italian seasoning; add to skillet and cook until golden brown, about 5–7 minutes. Remove chicken and set aside.
3. In the same skillet, sauté garlic until fragrant, then add sun-dried tomatoes and cook briefly.
4. Add orzo to the skillet and stir to coat in oil, toasting for 1–2 minutes.
5. Pour in chicken broth, scrape up browned bits, bring to a simmer and cook uncovered for 8–10 minutes until orzo is tender and most liquid is absorbed.
6. Stir in heavy cream and Parmesan cheese, return chicken to skillet, and cook for 2–3 minutes until sauce is silky.
7. Add spinach and stir until wilted. Adjust seasoning and garnish with parsley before serving.
