1. Heat olive oil or butter in a Dutch oven over medium heat and sauté onion for 2–3 minutes until translucent, then add garlic and cook for 1 minute.
2. Add shredded chicken and chicken broth, scraping up any browned bits, and bring to a low simmer.
3. Stir in sun-dried tomatoes and Italian seasoning, simmer for 5 minutes, then reduce heat and whisk in the cream.
4. Add cheese tortellini and cook for 5–7 minutes until pasta is tender and floats to the top, stirring occasionally.
5. Lower heat and stir in fresh orange juice and orange zest, then season with salt and pepper to taste.
6. Fold in baby spinach and cook until wilted, then ladle into bowls and serve with extra orange zest if desired.
