Creepy Red Velvet Popcorn for Spooky Nights

Ingredients

10 cups plain popped popcorn (unpopped kernels removed)

1 cup granulated sugar

1/2 cup unsalted butter

2 tablespoons light corn syrup

2 tablespoons unsweetened cocoa powder

1 teaspoon vanilla extract

1 to 2 teaspoons red gel food coloring

Pinch of fine salt

Optional: 1/2 cup white chocolate chips or vanilla candy melts (for drizzle)


Instructions

1. Line a baking sheet with parchment; place popcorn in a large bowl and discard any unpopped kernels.

2. In a medium saucepan over medium heat, melt butter; add sugar, corn syrup, cocoa, and salt.

3. Stir until the sugar dissolves and the mixture is smooth; simmer 3 to 4 minutes until glossy (235–240°F if using a thermometer).

4. Remove from heat; stir in vanilla and red gel food coloring until a deep crimson hue is reached.

5. Immediately pour the hot syrup over popcorn; toss quickly with a spatula to coat as evenly as possible.

6. Spread the coated popcorn onto the lined sheet in an even layer; cool 10 to 15 minutes until set.

7. Optional: melt white chocolate or candy melts, drizzle over popcorn, and let set 5 minutes.

8. Break into clusters; serve at once or store airtight at room temperature for up to 3 days.
