Golden roasted Brussels sprouts tossed in a sweet-tangy homemade balsamic glaze for a crisp, flavorful side dish.

Instructions
1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Rinse and trim Brussels sprouts, then halve larger ones for even cooking.
3. In a bowl, toss sprouts with olive oil, sea salt, black pepper, and 2 tablespoons balsamic vinegar.
4. Spread sprouts cut side down on the prepared sheet and roast for 20 minutes.
5. Flip sprouts and roast for another 5 minutes, adding garlic halfway through if using.
6. While sprouts roast, simmer 1/2 cup balsamic vinegar and maple syrup in a saucepan over medium heat for 8 to 12 minutes until thickened.
7. Remove glaze from heat once it coats the back of a spoon and let it cool slightly.
8. Transfer roasted sprouts to a serving bowl and drizzle with warm balsamic glaze.
9. Sprinkle with grated Parmesan if desired and serve immediately.
