1. Gently wipe oyster mushrooms with a damp paper towel and tear larger clusters into bite-sized pieces
2. Combine plant-based milk and apple cider vinegar and let sit until curdled, then whisk in flour, garlic powder, onion powder, smoked paprika, and salt to form the batter
3. In a separate bowl, mix dredging ingredients: flour, cornstarch, black pepper, cayenne, and salt
4. Dip each mushroom piece into the batter and let rest for 1–2 minutes, then coat in the dry mix
5. For extra crunch, dip the coated mushrooms back into the batter and again into the flour mixture
6. Heat oil in a pan to 350°F (175°C)
7. Fry mushrooms in batches for 3–4 minutes per side until golden brown, avoiding overcrowding
8. Drain mushrooms on a wire rack and let rest for a few minutes
9. Season lightly with salt or spices while still warm
