1. Preheat oven to 425°F and line a baking sheet with parchment paper.
2. Pat zucchini slices dry with paper towels to remove excess moisture.
3. In a bowl, toss zucchini with olive oil, garlic powder, salt, pepper and half the Parmesan until evenly coated.
4. Arrange slices in a single layer on the prepared baking sheet without overlapping.
5. Sprinkle remaining Parmesan and bread crumbs over the slices for extra crunch.
6. Bake for 10–12 minutes, then flip each slice and bake an additional 10–13 minutes until golden brown and crispy.
7. Remove from oven and let cool on the tray for 2–3 minutes to firm up before serving.
