Description

Turn leftover sourdough discard into a crunchy, gut-friendly snack. These easy-to-make crackers reduce food waste, support digestion through natural fermentation, and pair perfectly with dips, cheese, or soups.


Ingredients

  • 1 cup sourdough discard (unfed starter, room temperature)
  • 1 cup whole wheat flour (or spelt/all-purpose)
  • 3 tablespoons olive oil
  • 1 teaspoon sea salt
  • 12 teaspoons optional herbs (rosemary or garlic powder)

  • Instructions

    1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

    2. In a bowl, mix sourdough discard, olive oil, and sea salt until smooth.

    3. Gradually add flour and stir until a soft dough forms.

    4. Let dough rest 20–30 minutes at room temperature.

    5. Place dough between two sheets of parchment and roll thin (about 1/8 inch).

    6. Remove top parchment and score into desired shapes with a pizza cutter.

    7. Transfer parchment and dough to the baking sheet.

    8. Bake 20–25 minutes until golden brown and crisp, rotating halfway.

    9. Cool completely, then break along scored lines and store in an airtight container.
