  • 1 1/2 pounds fresh Brussels sprouts, trimmed and halved
  • 1/2 cup freshly grated Parmesan cheese
  • 3 tablespoons olive oil
  • 2 tablespoons fresh herbs, chopped (rosemary, thyme or parsley)
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons optional breadcrumbs

  • Instructions

    1. Preheat oven to 400°F (200°C).

    2. Pat Brussels sprouts dry, trim stems and remove outer leaves, then halve vertically.

    3. In a bowl, toss sprouts with olive oil, garlic, salt, pepper and chopped herbs.

    4. Add grated Parmesan and optional breadcrumbs, tossing gently to coat.

    5. Arrange sprouts cut-side down on a parchment-lined baking sheet, spacing evenly.

    6. Roast for 20 to 25 minutes, flipping halfway, until golden and crispy.

    7. Remove from oven and sprinkle with extra Parmesan or fresh herbs before serving.
