  • 1/2 cup grated parmesan cheese
  • 2 large eggs, lightly beaten
  • 1/2 cup all-purpose flour
  • 1/2 cup breadcrumbs
  • 2 tablespoons chopped fresh parsley
  • 1 clove garlic, minced (optional)
  • Salt and black pepper to taste
  • Vegetable oil for frying

  • Instructions

    1. Shred the yellow squash, toss with a pinch of salt, let rest 10 minutes, then squeeze out excess moisture in a clean towel.

    2. In a mixing bowl combine drained squash, parmesan, eggs, flour, breadcrumbs, parsley, garlic if using, salt, and pepper until a sticky batter forms.

    3. Heat 2–3 tablespoons of oil in a skillet over medium-high heat until shimmering.

    4. Scoop 2 tablespoons of batter per fritter and gently flatten into rounds.

    5. Fry the fritters in batches for 2–3 minutes per side or until deep golden brown.

    6. Transfer cooked fritters to a paper towel-lined plate to drain excess oil and serve warm.
