1. Wash and trim the yellow squash
2. Grate the squash and place in a colander
3. Sprinkle 1/2 teaspoon salt over the squash and let rest 10 minutes
4. Squeeze out excess water from the squash using a clean towel
5. In a bowl combine squash, parmesan, breadcrumbs, egg, pepper, garlic powder and remaining salt
6. Mix until a moist batter forms, adding more breadcrumbs if too loose
7. Heat oil in a skillet over medium high heat
8. Form heaping tablespoons of batter into patties and flatten slightly
9. Fry fritters 3 to 4 minutes per side until golden brown
10. Drain fritters on paper towels and serve warm
