1. Preheat the oven to 375°F (190°C).
2. Cut the sourdough bread into 1/2-inch cubes.
3. In a large bowl, combine olive oil, minced garlic, grated parmesan, dried oregano, salt, and pepper.
4. Add the bread cubes to the bowl and toss until evenly coated.
5. Arrange the coated cubes in a single layer on a baking sheet.
6. Bake for 12–15 minutes, turning the cubes halfway through for even browning.
7. Remove from the oven when golden and fragrant, then let cool completely on the baking sheet.
8. Store cooled croutons in an airtight container at room temperature for up to one week or freeze for up to three months.
