1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. In a bowl, toss squash slices with olive oil, garlic powder, Italian herbs, salt, and pepper until evenly coated.
3. Arrange the slices in a single layer on the baking sheet without overlap.
4. Sprinkle grated Parmesan evenly over each slice and, if using, add panko breadcrumbs and red pepper flakes.
5. Bake for 18–22 minutes, flipping halfway, until edges are golden and cheese is crisp.
6. Remove from oven and let cool on the baking sheet for 1–2 minutes to firm up.
7. Transfer to a serving platter and garnish with chopped fresh parsley if desired.
