Description

These crispy zucchini fritters are high protein, low carb, and cooked in an air fryer for a golden, guilt-free crunch. Made with organic zucchini, eggs, almond flour, Greek yogurt, and fresh chives, they make perfect protein side dishes or healthy snacks.


Ingredients

  • 2 medium organic zucchinis, grated
  • 2 large organic eggs
  • 1/4 cup almond flour
  • 2 tablespoons Greek yogurt
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon chopped fresh chives
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon cracked black pepper
  • 1/4 teaspoon garlic powder
  • olive oil cooking spray

  • Instructions

    1. Wash and trim zucchinis, grate and place in a bowl, sprinkle with salt and let sit 10 minutes

    2. Wrap grated zucchini in a clean towel or cheesecloth and squeeze out excess moisture

    3. In a large bowl whisk eggs, almond flour, Greek yogurt, Parmesan, chives, pepper, and garlic powder

    4. Fold drained zucchini into the mixture until evenly combined

    5. Preheat air fryer to 375°F (190°C) and lightly spray the basket with olive oil cooking spray

    6. Form mixture into 8 patties, flatten slightly, and arrange in a single layer in the air fryer basket

    7. Air fry for 8–10 minutes, flip fritters, then cook an additional 5–7 minutes until golden and crisp

    8. Remove fritters and place on a cooling rack for 1 minute before serving
