10 cups plain air-popped popcorn

1/2 cup unsalted butter

1 cup granulated sugar

1/4 cup light corn syrup

2 tbsp unsweetened cocoa powder

1 tsp vanilla extract

1/4 tsp fine salt

1/2 to 1 tsp red gel food coloring

1 oz white chocolate, melted (optional drizzle)

2 tbsp Halloween sprinkles or candy eyes (optional)


Instructions

1. Heat oven to 250°F (120°C). Line a large rimmed baking sheet with parchment.

2. Place popcorn in a large bowl and discard any unpopped kernels.

3. Melt butter in a medium saucepan over medium heat.

4. Stir in sugar, corn syrup, cocoa, and salt; bring to a gentle boil.

5. Simmer 2–3 minutes, stirring. Remove from heat; stir in vanilla and red coloring.

6. Immediately pour over popcorn and toss quickly to coat evenly.

7. Spread coated popcorn on the prepared sheet in an even layer.

8. Bake 30 minutes, stirring every 10 minutes for even drying.

9. Cool completely on the sheet, then break into clusters.

10. Drizzle with melted white chocolate and add sprinkles, if using. Store airtight.
