  • Total Time: 20-30 minutes
  • Yield: 1 large platter 1x

Description

Create a delightful and healthy Easter Bunny Veggie Tray, perfect for encouraging everyone to enjoy their vegetables. This charming and customizable platter is quick to assemble and adds a whimsical touch to your holiday spread, making healthy eating fun and engaging for all ages.

Ingredients

Scale
  • 1 head of cauliflower, washed and broken into florets
  • 2 cups baby carrots, washed
  • 1 large cucumber, sliced into rounds or sticks
  • 1 pint cherry tomatoes, washed
  • 1 cup snap peas, washed
  • 1/2 cup black olives, sliced or whole
  • 1 small red bell pepper, thinly sliced or cut into small shapes
  • 12 small bowls or ramekins for dip
  • Your favorite ranch or vegetable dip

  • Instructions

    1. Prepare Your Vegetables: Begin by thoroughly washing all your chosen vegetables. Break the cauliflower into small, bite-sized florets. Slice the cucumber into rounds or sticks, depending on your preference. If using a red bell pepper, slice it thinly or cut out small shapes for the bunny’s features.

    2. Form the Bunny’s Body: On a large serving platter, arrange the cauliflower florets to create the main body of the bunny. Think of a large oval or slightly pear shape. This will be the fluffy white “fur” of your bunny.

    3. Add the Bunny’s Head: Place a smaller cluster of cauliflower florets above the body to form the bunny’s head. Ensure it connects nicely to the body.

    4. Create the Ears: Use two rows of cucumber slices or snap peas to form the bunny’s ears extending upwards from the head. You can make them long and slender or shorter and wider, depending on your preference.

    5. Place the Dip Bowls: Position one or two small bowls or ramekins in the center of the bunny’s body. These will hold your ranch or vegetable dip, serving as the bunny’s “tummy” or a convenient dipping spot.

    6. Decorate with Carrots and Tomatoes: Arrange the baby carrots around the edges of the bunny’s body and head, creating a colorful border. Use cherry tomatoes to fill in gaps or create rosy cheeks on the bunny’s face.

    7. Add Facial Features: Use black olive slices to create the bunny’s eyes and a small piece of red bell pepper for the nose. You can also use thin strips of cucumber or bell pepper for whiskers.

    8. Fill in the Gaps: Fill any remaining empty spaces on the platter with the rest of your prepared vegetables, such as snap peas, additional cucumber slices, or more cherry tomatoes. This makes the tray look abundant and inviting.
