1. Preheat oven to 400°F (200°C).
2. Roll out half of the pie crust and fit into a 9-inch pie pan.
3. In a mixing bowl combine blueberries, pineapple, sugar, cornstarch, and lemon juice until evenly coated.
4. Spoon the fruit mixture into the crust and dot with butter.
5. Roll out remaining crust, place over filling, trim and crimp edges, then cut vents for steam.
6. Brush top crust with milk or beaten egg and sprinkle sugar if desired.
7. Bake at 400°F for 15 minutes, reduce to 350°F and bake 30–40 minutes until crust is golden and filling bubbles.
8. Cool on a wire rack for at least two hours before slicing.
