  • 1 egg yolk
  • ½ teaspoon vanilla extract

  • Instructions

    1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners

    2. Whisk flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves in a bowl

    3. In a separate bowl, mix pumpkin puree, brown sugar, oil, eggs, and vanilla until smooth

    4. Fold the dry ingredients into the wet ingredients until just combined

    5. Beat cream cheese, granulated sugar, egg yolk, and vanilla until smooth for the cheesecake filling

    6. Spoon one tablespoon of pumpkin batter into each muffin cup

    7. Add a dollop of cheesecake filling on top of the batter in each cup

    8. Top with remaining pumpkin batter and gently swirl with a toothpick
