A vibrant, crunchy salad combining broccoli, shredded vegetables, nuts, seeds, and a zesty lemon-Dijon dressing for a refreshing healthy greens lunch.

Instructions
1. Rinse and dry all produce.
2. Cut broccoli into bite-sized florets, shred carrots, slice red cabbage thinly.
3. In a large bowl, combine broccoli, carrots, cabbage and diced apple or pear if using.
4. Add sunflower seeds and almonds or walnuts.
5. In a small bowl or mason jar, whisk together lemon juice, olive oil, Dijon mustard, honey or maple syrup, salt and pepper.
6. Pour dressing over salad and toss until evenly coated.
7. Refrigerate for 15–20 minutes before serving to allow flavors to meld.
8. Serve chilled as a main dish or side, or pack in an airtight container for up to three days.
