Transform leftover sourdough starter into rich, molten chocolate lava cakes with a hint of tang. This easy recipe yields individual desserts or a small loaf, combining bread flour, cocoa, and active starter for a chewy, fudgy interior.

1. Preheat oven to 375°F (190°C) and grease six ramekins or line with parchment rounds.
2. Whisk melted butter, brown sugar, eggs, and vanilla in a medium bowl until smooth.
3. Add sourdough starter and whisk until creamy.
4. Sift together bread flour, cocoa powder, and salt in another bowl.
5. Fold dry ingredients into wet mixture until no flour streaks remain, careful not to overmix.
6. Fold in chocolate chips, reserving a few for the center of each portion.
7. Divide batter into ramekins, filling each about ¾ full, and press extra chocolate pieces into the center.
8. Bake individual cakes for 10–12 minutes until edges are set and centers still jiggle.
9. Let rest for 1 minute, then carefully invert onto serving plates.
10. Dust with powdered sugar or serve with whipped cream, and enjoy immediately.
