  • 68 medium slices sourdough bread
  • 1 bunch asparagus (about 250g), trimmed and cut
  • 1.5 cups mushrooms, sliced
  • 6 large eggs
  • 1 cup milk or half-and-half
  • 1 cup cheese (feta, cheddar, or gruyere), crumbled or shredded
  • 1 tbsp olive oil or butter
  • 2 tbsp fresh herbs (parsley, thyme, or chives), chopped
  • salt to taste
  • black pepper to taste

  • Instructions

    1. Preheat oven to 375°F (190°C) and lightly grease a 9-inch pie dish.

    2. Arrange sourdough slices in the dish to form a crust, brush with oil or butter, and bake for 10 minutes.

    3. Sauté mushrooms in oil or butter over medium heat for 5–7 minutes, add asparagus and cook 3–4 minutes, then season and remove from heat.

    4. Whisk eggs, milk, half the cheese, herbs, salt, and pepper in a bowl until combined.

    5. Layer sautéed vegetables in the crust, pour egg mixture over them, and sprinkle remaining cheese on top.

    6. Bake for 30–35 minutes until set and golden. Let rest 10 minutes before slicing and serving.
