1. Preheat the oven to 425°F (220°C) and line baking sheets with parchment paper.
2. For fries, cut zucchini into 1/2-inch sticks and pat dry with paper towels.
3. For chips, slice zucchini into 1/8-inch rounds and pat dry with paper towels.
4. In one bowl, beat the eggs. In another bowl, mix breadcrumbs, Parmesan, salt, pepper, garlic powder, and paprika.
5. Dip each zucchini piece into the egg, then press into the breadcrumb mixture and place in a single layer on the baking sheets.
6. Brush or spray lightly with olive oil for extra crispiness.
7. Bake fries for 20–25 minutes, turning halfway, until golden and crisp.
8. Bake chips for 15–20 minutes, flipping once, until golden and crisp.
9. If desired, broil for 1–2 minutes at the end, watching closely to prevent burning.
10. Cool on a wire rack for a few minutes before serving to maintain crispness.
