These easy baked yellow squash tots are a lighter twist on classic tater tots, offering a crispy exterior and tender, flavorful interior. Perfect as a snack, side dish, or appetizer with endless variations and dipping options.

Ingredients

Scale
  • 2 medium yellow squash (about 3 cups shredded)
  • 1 large egg
  • 1/2 cup breadcrumbs (panko or gluten-free)
  • 1/2 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • salt to taste
  • black pepper to taste

  • Instructions

    1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

    2. Grate the yellow squash and place the shreds in a clean towel or cheesecloth, squeezing out as much liquid as possible.

    3. In a large bowl, combine the drained squash, egg, breadcrumbs, cheese, garlic powder, onion powder, salt, and pepper until mixture holds together.

    4. Scoop tablespoonfuls of the mixture and shape into small tot cylinders, placing them 1 inch apart on the prepared baking sheet.

    5. Bake for 18–22 minutes, flipping halfway through, until the tots are golden brown and crispy.

    6. Remove from oven and let cool slightly before serving with your favorite dip.
