Ingredients

Scale
  • 1 pound ziti pasta
  • 1 pound Italian sausage (mild or hot, casings removed)
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1/2 cup water or chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional, for a little heat)
  • Salt and black pepper to taste
  • 15 ounces ricotta cheese
  • 1 large egg
  • 1/4 cup grated Parmesan cheese, plus more for topping
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups shredded mozzarella cheese, divided
  • Fresh parsley, chopped (for garnish)

  • Instructions

    1. 1. Prepare the Pasta: Begin by cooking the ziti pasta according to package directions until it’s al dente. Drain the pasta thoroughly and set it aside. While the pasta cooks, you can start on the sauce to save time.

    2. 2. Brown the Sausage and Saute Aromatics: Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until it’s fully browned and no longer pink. Drain any excess grease. Add the chopped onion to the skillet with the sausage and cook until it softens, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant, being careful not to burn the garlic.

    3. 3. Simmer the Tomato Sauce: Pour in the crushed tomatoes, tomato sauce, and water or chicken broth. Stir in the dried oregano, dried basil, and optional red pepper flakes. Season generously with salt and black pepper. Bring the sauce to a gentle simmer, then reduce the heat to low, cover, and let it cook for at least 10-15 minutes to allow the flavors to meld. Stir occasionally to prevent sticking.

    4. 4. Prepare the Ricotta Mixture: While the sauce simmers, in a medium bowl, combine the ricotta cheese, egg, 1/4 cup grated Parmesan cheese, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix everything until well combined and smooth. This creamy mixture will add a wonderful richness to the baked ziti.

    5. 5. Assemble the Ziti: Preheat your oven to 375 F (190 C). Lightly grease a 9×13 inch baking dish. Spread about 1 cup of the meat sauce on the bottom of the prepared baking dish. Next, layer half of the cooked ziti over the sauce. Dollop half of the ricotta mixture over the ziti, spreading it gently. Sprinkle 1 cup of mozzarella cheese over the ricotta layer. Repeat with the remaining ziti, the rest of the ricotta mixture, and then cover with the remaining meat sauce.

    6. 6. Bake Until Golden and Bubbly: Top the entire dish with the remaining 1 cup of shredded mozzarella cheese and an extra sprinkle of Parmesan if desired. Cover the baking dish loosely with aluminum foil. Bake for 20 minutes. Then, remove the foil and continue to bake for another 10-15 minutes, or until the cheese is melted, bubbly, and lightly golden brown on top. The sauce should be simmering around the edges.

    7. 7. Rest and Serve: Once out of the oven, let the baked ziti rest for 5-10 minutes before serving. This allows the pasta to set and makes it easier to serve neat portions. Garnish with fresh chopped parsley for a pop of color and freshness.
