  • large peaches, sliced (2)
  • blueberries (3/4 cup)
  • granulated sugar (2 tablespoons)
  • fresh ginger, grated (1/2 teaspoon)
  • lemon juice (1 teaspoon)
  • cornstarch (1 tablespoon)
  • unsalted butter, softened (1/4 cup)
  • granulated sugar (1/4 cup)
  • almond flour (1/2 cup)
  • egg (1)
  • vanilla extract (1/2 teaspoon)
  • egg (for egg wash)
  • raw sugar (1 tablespoon)

  • Instructions

    1. Combine flour, salt, and sugar. Cut in cold butter until coarse crumbs form.

    2. Add ice water gradually until dough holds together. Form disk, wrap, and chill 30 minutes.

    3. Cream softened butter and sugar for frangipane until light. Mix in almond flour, egg, and vanilla until smooth.

    4. Toss peaches and blueberries with sugar, ginger, lemon juice, and cornstarch in a bowl.

    5. Preheat oven to 400°F (200°C). Line baking sheet with parchment paper.

    6. Roll chilled dough into a 12-inch circle and transfer to sheet.

    7. Spread frangipane over dough, leaving a 2-inch border.
