  • 4 cups potatoes, peeled and cubed
  • 2 cups carrots, sliced
  • 1 cup celery, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1½ teaspoons salt
  • ½ teaspoon ground black pepper
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 1 tablespoon olive oil
  • 1 can (15 oz) white beans, rinsed and drained (optional)
  • 1 cup chopped spinach or kale (optional)
  • 2 teaspoons lemon juice
  • 8 cups water or low-sodium chicken stock
  • 2 tablespoons fresh parsley, chopped

  • Instructions

    1. Wash and chop potatoes, carrots, celery, onion, and mince garlic.

    2. Heat olive oil in a heavy 6–8 quart pot over medium heat.

    3. Add onion, celery, and carrots; sauté for 5–7 minutes until softened.

    4. Stir in garlic and cook 30 seconds until fragrant.

    5. Place whole chicken in the pot and pour in water or stock to cover.

    6. Add thyme, bay leaves, salt, and pepper; bring to a simmer.

    7. Reduce heat to low, cover, and simmer for 45–55 minutes, skimming foam.

    8. Remove chicken and set aside to cool.

    9. Add cubed potatoes to simmering broth and cook 15–20 minutes until tender.

    10. Shred cooled chicken meat and discard skin and bones.

    11. Return shredded chicken to the pot. Add beans if using.

    12. Stir in lemon juice and chopped parsley. Adjust salt and pepper to taste.

    13. Ladle soup into bowls and serve warm.
