  • Instructions

    2. Melt the chocolate chips: In a microwave-safe bowl, melt the chocolate chips. Heat in 30-second intervals, stirring well after each, until smooth and fully melted. Be careful not to overheat the chocolate, as it can seize. Alternatively, you can use a double boiler on the stovetop.

    3. Blend the cottage cheese: In a food processor or high-speed blender, combine the cottage cheese, cocoa powder, maple syrup (or honey), vanilla extract, and salt. Blend until the mixture is completely smooth and creamy, with no visible lumps of cottage cheese. This might take a minute or two, so be patient. Scrape down the sides of the bowl as needed.

    4. Combine wet ingredients: Pour the melted chocolate into the cottage cheese mixture in the food processor or blender. Blend again for another 30 seconds, or until everything is thoroughly combined and the mixture is a uniform chocolate color. The mixture should be thick and glossy.

    5. Transfer to the prepared dish: Pour the chocolate fudge mixture into your parchment-lined dish. Use a spatula to spread it evenly into a layer.

    6. Chill until firm: Place the dish in the refrigerator for at least 1 hour, or until the fudge is firm to the touch. For a quicker set, you can place it in the freezer for about 30 minutes.
