  • 4 medium zucchinis, shredded
  • 1 medium onion, chopped
  • 23 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil or butter
  • 1/2 cup cream or non-dairy alternative
  • 2 tablespoons fresh basil or parsley, chopped
  • salt and pepper to taste

  • Instructions

    1. Heat olive oil or butter in a soup pot over medium heat.

    2. Add chopped onion and sauté until translucent, about 5 minutes.

    3. Stir in minced garlic and cook for 30 seconds until fragrant.

    4. Add shredded zucchini and cook until tender, about 7 minutes.

    5. Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 10–15 minutes.

    6. Blend soup until smooth using an immersion blender or in batches in a countertop blender.

    7. Return soup to low heat, stir in cream or alternative and season with salt and pepper.

    8. Ladle into bowls and garnish with chopped herbs, a drizzle of olive oil, or shredded squash as desired.
