1. Heat olive oil or butter in a soup pot over medium heat.
2. Add chopped onion and sauté until translucent, about 5 minutes.
3. Stir in minced garlic and cook for 30 seconds until fragrant.
4. Add shredded zucchini and cook until tender, about 7 minutes.
5. Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 10–15 minutes.
