  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 2 cups panko breadcrumbs
  • ¼ cup cornstarch
  • Vegetable oil, for frying
  • 12 slider buns
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 23 tbsp sriracha (to taste)
  • 1 cup shredded lettuce or coleslaw mix
  • 2 tbsp chopped green onions (optional)

  • Instructions

    1. Cut chicken into 2–3 inch pieces and season with salt, pepper, and garlic powder.

    2. Set up three bowls: flour; beaten eggs; panko mixed with cornstarch. Dredge chicken in flour, egg, then breadcrumb mix.

    3. Heat ¼ inch oil in a skillet over medium heat. Fry chicken in batches 3–4 minutes per side until golden and cooked through, draining on paper towels.

    4. While chicken cooks, whisk together mayonnaise, sweet chili sauce, and sriracha in a bowl.

    5. Toss hot chicken pieces in sauce until well coated.

    6. Slice slider buns and lightly toast if desired.

    7. Place a few lettuce leaves on each bun bottom, top with sauced chicken, sprinkle green onions, and cover with bun tops.

    8. Serve immediately, with extra sauce on the side if desired.
