2. Set up three bowls: flour; beaten eggs; panko mixed with cornstarch. Dredge chicken in flour, egg, then breadcrumb mix.
3. Heat ¼ inch oil in a skillet over medium heat. Fry chicken in batches 3–4 minutes per side until golden and cooked through, draining on paper towels.
4. While chicken cooks, whisk together mayonnaise, sweet chili sauce, and sriracha in a bowl.
5. Toss hot chicken pieces in sauce until well coated.
6. Slice slider buns and lightly toast if desired.
