1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper
2. Pierce sweet potatoes with a fork and roast whole for 45–55 minutes until tender and caramelized
3. Let potatoes cool 10–15 minutes, peel skins, and transfer flesh to a large bowl
4. Mash with a hand mixer or masher until smooth
5. Add butter, brown sugar, maple syrup, salt, cinnamon, nutmeg, bourbon, cream, and vanilla and blend until silky
6. Transfer mixture to a greased 9×13-inch casserole dish and smooth the top
7. In a bowl combine pecans, brown sugar, flour, and sea salt
8. Drizzle in melted butter and toss until crumbly
9. Sprinkle pecan topping evenly over potatoes
10. Bake at 350°F (175°C) for 30–35 minutes until topping is golden and crisp
11. Let rest 10 minutes before serving
