1. In a large bowl combine warm water, sugar and yeast and let sit 5 minutes until frothy
2. Stir in olive oil, salt and half of the flour, then gradually add remaining flour until a soft dough forms
3. Knead dough on a floured surface for 6–8 minutes until smooth and elastic
4. Place dough in a greased bowl, cover and let rise 45 minutes to 1 hour until doubled
5. Melt butter and stir in minced garlic, chopped parsley and salt
6. Punch down risen dough and roll into a 10×14 inch rectangle
7. Brush half of the garlic butter over the dough and sprinkle with half of the cheese
8. Fold dough lengthwise, press gently, then roll again to flatten
9. Cut dough into 1 inch strips and place on a parchment-lined baking sheet
10. Brush strips with remaining garlic butter and top with remaining cheese
11. Bake at 400°F for 15–18 minutes until cheese is melted and edges are golden
12. Brush hot breadsticks with any remaining garlic butter and allow to rest a few minutes before serving
