1. Rinse the sushi rice under cold water until water runs clear.
2. Cook the rice in a rice cooker or pot according to package instructions.
3. While rice is warm, gently fold in rice vinegar, sugar, and salt and let cool to room temperature.
4. Shred imitation crab and mix with mayonnaise until evenly coated.
5. Slice cucumber, dice avocado, shred carrots, and prepare edamame.
6. Divide seasoned rice among four bowls or meal prep containers.
7. Top each bowl with crab mixture, cucumber, avocado, carrots, and edamame.
8. Sprinkle sesame seeds over each bowl.
9. Pack spicy mayo and soy sauce in separate small containers to add before eating.
