  • 1/4 teaspoon salt
  • 1/2 cup maple syrup
  • 1/4 cup almond butter
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional)

  • Instructions

    1. Preheat oven to 350 degrees F and line an 8×8 inch pan with parchment paper.

    2. In a bowl whisk oats, oat flour, baking powder, cinnamon, nutmeg, ginger, and salt.

    3. In another bowl mix pumpkin puree, maple syrup, almond butter, and vanilla until smooth.

    4. Fold the dry ingredients into the wet ingredients until just combined.

    5. Stir in chocolate chips if using.

    6. Spread batter evenly in the prepared pan.

    7. Bake for 25 to 30 minutes until the center is set and edges are golden.

    8. Let cool in the pan for 30 minutes before lifting out and cutting into bars.
