Ingredients
10 cups plain popped popcorn (from ~1/2 cup kernels or 2 plain microwave bags)
1 1/2 cups white chocolate chips or vanilla candy melts (about 9 oz)
1/2 cup red velvet cake mix (dry; heat-treated, see steps)
2–3 drops red gel food coloring (optional)
1 teaspoon vegetable or coconut oil (optional, for thinning)
1/4 cup Halloween sprinkles
1/2 cup mini marshmallows or candy corn or M&M’s (optional)
Pinch of fine salt (optional)
Instructions
1. Line a large baking sheet with parchment. Place popcorn in a big bowl and discard unpopped kernels.
2. Heat-treat cake mix: microwave the dry mix in a bowl for 60–90 seconds, stirring every 15–30 seconds, until it reaches 165°F; cool completely.
3. Melt white chocolate in a microwave-safe bowl in 20–30 second bursts, stirring until smooth; stir in oil if needed and add food coloring.
4. Whisk the cooled, heat-treated cake mix into the melted chocolate until glossy and smooth.
5. Pour coating over popcorn; toss gently with a spatula until evenly coated.
6. Spread popcorn onto the lined sheet; immediately add sprinkles and any mix-ins, and a tiny pinch of salt if using.
7. Let set at room temperature 15–20 minutes until firm; break into clusters and serve or store airtight up to 3–5 days.
