1. In a bowl whisk flour, salt and sugar.
2. Cut cold butter into flour until pea-sized bits remain.
3. Stir in sourdough discard and add ice water, 1 tbsp at a time, until dough holds together.
4. Form dough into a disk, wrap and chill 1 hour.
5. Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
6. Roll chilled dough into a 12-inch circle and transfer to the baking sheet.
7. Toss apple slices with lemon juice, brown sugar, honey, cinnamon, nutmeg, flour and salt; let rest 10 minutes.
8. Arrange apples in overlapping circles on the crust, leaving a 1.5-inch border.
9. Fold crust edges over apples, pleating as you go.
10. Brush crust with beaten egg and sprinkle coarse sugar if desired.
11. Bake 35–45 minutes until crust is golden and filling bubbles.
12. Cool 10–15 minutes before slicing and serving.
