Creepy-cute no-cook Halloween bites made with mini mozzarella, salami, and olive “pupils.” Fast to assemble, kid-friendly to make, and a guaranteed party hit.
Ingredients
20 ciliegine (mini mozzarella balls), drained
20 thin slices salami (or turkey pepperoni)
8–10 large black or pimiento-stuffed green olives, sliced into rings
2 tbsp roasted red pepper, finely diced (for pupils), optional
1 tsp hot sauce or beet juice (for “veins”), optional
Fresh basil or spinach, thinly sliced, optional garnish
20 toothpicks
Instructions
1. Drain and pat the mozzarella dry with paper towels so it grips the salami.
2. Wrap each mozzarella ball with a salami slice, leaving a small area of cheese exposed on top.
3. Place an olive ring on the exposed mozzarella to form the iris; add a tiny red pepper piece in the center for the pupil.
4. Secure each eyeball with a toothpick through the side so the toppings stay put.
5. For a spooky effect, draw faint red “veins” on the mozzarella using a toothpick dipped in hot sauce or beet juice.
6. Arrange on a dark platter, garnish with basil or spinach ribbons, and chill until serving.
7. Serve cold. Keep chilled on an ice-lined tray if set out for more than 1–2 hours.
