Description

A quick and flavorful one-pan dinner combining chicken sausage, turkey sausage, and colorful roasted vegetables, perfect for meal prep and busy weeknights.


Ingredients

  • 12 oz chicken sausage, sliced into 1/2-inch coins
  • 12 oz turkey sausage, sliced
  • 1 large red bell pepper, chopped
  • 1 large yellow bell pepper, chopped
  • 1 medium red onion, sliced into wedges
  • 2 medium sweet potatoes, peeled and cubed
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp dried thyme
  • salt and pepper to taste
  • optional garnish: chopped parsley or lemon juice

  • Instructions

    1. Preheat oven to 400°F (200°C) and line a sheet pan with parchment or spray with oil

    2. Place sweet potatoes, peppers, onion, and broccoli on the pan and drizzle with olive oil

    3. Sprinkle smoked paprika, garlic powder, thyme, salt, and pepper over vegetables and toss to coat

    4. Arrange chicken sausage and turkey sausage slices evenly on top of the vegetables

    5. Roast for 25 to 30 minutes, turning halfway, until vegetables are tender and sausage is browned

    6. Garnish with parsley or a squeeze of lemon before serving or storing
