  • 1/2 cup granulated sugar
  • 1 to 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 3/4 cup milk or non-dairy milk
  • 1/2 cup sourdough starter (active or discard)
  • 1 teaspoon vanilla extract (optional)
  • 1/4 cup rolled oats (optional)
  • 1/4 cup chopped pecans or walnuts (optional)
  • 1 to 2 tablespoons brown sugar for topping (optional)

  • Instructions

    1. Preheat oven to 350°F and butter an 8×8-inch baking dish.

    2. In a bowl toss fresh apples or canned apples with granulated sugar, cinnamon, nutmeg and lemon juice until coated.

    3. Spread apple mixture evenly in the prepared baking dish.

    4. In a medium bowl whisk together flour, baking powder and salt.

    5. In another bowl combine melted butter, milk, sourdough starter and vanilla until smooth.

    6. Pour wet ingredients into dry and stir gently until just combined.

    7. Pour batter over apples and sprinkle with oats, nuts or brown sugar if using.

    8. Bake 35 to 45 minutes until top is golden and filling bubbles. Let cool 10 to 15 minutes before serving.
