1. Preheat your oven to 375 F (190 C). Lightly grease a baking sheet or line it with parchment paper for easy cleanup.
2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. If making a sweeter version, add the granulated sugar here as well.
3. In a separate medium bowl, whisk together the sourdough discard, milk, melted butter (or oil), and the egg until well combined and smooth.
4. Pour the wet ingredients into the dry ingredients. Mix gently with a spoon or spatula until just combined. Do not overmix; a few lumps are fine.
5. If using, fold in the optional add-ins (shredded cheese, herbs, chocolate chips) into the batter now, distributing them evenly.
6. Drop spoonfuls of the batter onto your prepared baking sheet, leaving a little space between each one.
7. Bake for 15-20 minutes, or until golden brown on the edges and a toothpick inserted into the center comes out clean.
8. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.
