4. Transfer cooked vegetables to a mixing bowl and let cool slightly.
5. Stir in beaten eggs, sour cream, half of the shredded cheese, salt, and pepper until well combined.
6. Pour mixture into the prepared casserole dish and spread evenly.
7. Top with remaining cheese and breadcrumbs.
