1. Preheat oven to 300°F (150°C) and spread bread cubes on a baking sheet to dry for 10–15 minutes
2. In a skillet over medium heat cook bacon until crisp, drain and reserve 1 tablespoon fat
3. Melt butter in the same skillet and sauté onion, celery, and garlic for 8–10 minutes until soft
4. Stir in sage, thyme, parsley, salt, and pepper and cook for 1 minute
5. Place dried bread cubes in a large bowl and add sautéed vegetables and bacon
6. Gradually pour warm broth over the mixture, tossing gently to moisten evenly
7. Stir in beaten eggs until the cubes are coated without breaking apart
8. Transfer to a buttered baking dish, cover with foil and bake at 375°F (190°C) for 25–30 minutes
9. Remove foil and bake an additional 10–15 minutes until the top is golden and crisp
10. Let rest for 5 minutes before serving
