  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground nutmeg
  • 1 cup eggnog
  • 2 large eggs
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen cranberries
  • 1/2 cup orange juice
  • 1/4 cup water
  • 1/3 cup sugar
  • 1 teaspoon grated orange zest
  • 1/2 cup pure maple syrup
  • 1 tablespoon butter
  • pinch of sea salt

  • Instructions

    1. Mix the dry ingredients in a large bowl: flour, sugar, baking powder, baking soda, salt, and nutmeg.

    2. Whisk together eggnog, eggs, melted butter, and vanilla extract until smooth.

    3. Combine wet and dry ingredients and stir until just combined, leaving small lumps in the batter.

    4. Let the batter rest for 5 to 10 minutes while preparing the syrup.

    5. In a saucepan, combine cranberries, orange juice, water, sugar, and orange zest; simmer until berries burst and syrup thickens.

    6. Heat a nonstick skillet over medium heat and lightly grease with butter.

    7. Pour 1/4 cup batter onto the skillet and cook until bubbles appear and edges set, then flip and cook until golden.

    8. In a small saucepan, melt butter with maple syrup and salt to create the maple drizzle.

    9. Stack pancakes on plates, spoon over cranberry syrup, and finish with maple drizzle before serving.
