  • 1 tablespoon granulated sugar
  • ¼ teaspoon salt
  • 34 tablespoons ice water
  • ½ cup honey
  • ⅓ cup brown sugar
  • 3 large eggs
  • ¾ cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • Sea salt flakes (optional)
  • Whipped cream (optional)

  • Instructions

    1. Combine flour, sugar, and salt in a chilled bowl and cut in cold butter until coarse crumbs form

    2. Add ice water gradually, mixing until dough holds together, form a disk, wrap and chill for 30 minutes

    3. Roll out chilled dough to fit a 9-inch pie dish, trim edges, crimp, and chill while preparing filling

    4. Heat honey in a heavy saucepan over medium heat, cook until deep amber and aromatic, remove from heat and whisk in butter

    5. In a bowl whisk eggs, brown sugar, cream, vanilla, and sea salt, then slowly whisk in warm burnt honey mixture

    6. Preheat oven to 350°F (175°C)

    7. Pour filling into prepared crust and bake for 40–45 minutes until center is set but slightly wobbly

    8. Cool pie completely on a wire rack to allow custard to firm

    9. Before serving, sprinkle with sea salt flakes or top with whipped cream and drizzle with extra caramelized honey
